Real Food Friday: Breakfast of Champions

Breakfast.
We have all heard the spiel about how important it is. But a lot of the "healthy" breakfast foods out there are really just sugar-laden junk. The best way to navigate around those foods with 30 ingredients that you cannot pronounce is to make your own breakfast from scratch.
This can be a daunting task for some I know, but when you take the time to make it part of your repitoire it will start to feel like second nature, and your body will thank you for the nutritious breaking of the fast.
One of my favorite meals that I usually end up having multiple times a week is a veggie scramble. You can really play with any ingredients that feel right to you, but this is one of my favorite combination of mostly local goodies:
Locovore Vegetable Scramble
2 Local, free range eggs, beaten
1/2 one small onion, thinly sliced
1 clove of garlic
1-2 crimini mushrooms, thinly sliced
1/2 red pepper, diced
1 handful Lambs Quarters (wild spinach) and/or Kale
1/2 an avocado, cut in small cubes
2-3 cherry tomatoes, diced
3+ basil leaves, chiffonade style (very thin slices)
1 heaping tbsp. Carmelis herb provencal chevre goats cheese, crumbled (optional)
1 tbsp organic coconut oil (or organic olive oil)
Pinch of Himalayan pink salt, turmeric, cayenne and black pepper to taste
Siracha sauce, if you love that sh*t like I do
Heat skillet to medium heat and add coconut oil. Add diced onion and garlic until slightly translucent. Next, add the mushrooms and cook until slightly soft, usually 2-3 minutes. Next add your diced peppers and saute for another 2-3 minutes. Now add in your greens and saute for just a few monents until they begin to wilt. Add the eggs until they are cooked through. Top with the basil, diced tomatoes, cubed avocado, goats chevre and all spices, pepper and pink salt. Siracha sauce whenever you want it.
